We use an old-school winemaking technique that enables every blend to speak for itself. Fermenting each varietal together, we allow the personalities of the individual grapes to complement one another inherently.

Co-Fermentation; through diligent sampling and analysis of our vineyards we can harvest different varietals from different blocks, combining specific phenolic components and varying degrees of fermentable sugar and acidity into a single fermentation tank. This allows us to adjust our grape juice in the vineyard and produce wines pre-blended with aromatic intensity and elegant structure.
